  • ½ cup chicken broth.
  • 7 large flour tortillas.
  • 2 ½ cups of cooked rice.
  • 1 can (15 oz) black beans, drained and rinsed.
  • 1 cup shredded cheddar cheese.
  • Optional toppings: diced avocado, sour cream, chopped cilantro, hot sauce.

Cooking the chicken 

First step 

  1. First heat the olive oil (the oil can be changed, it’s up to you which oil you use) on normal medium flame (heat).
  2. Add the diced onion and fry it for 3-4 minutes until it becomes soft and brown.
  3. In the next step, add the minced garlic and fry it for another 40 seconds until fragrant.
  4. add the chicken breasts to the pot and season them with cumin, chili powder, oregano, salt and pepper.
  5. Fry the chicken for 6-7 minutes until browned.
  6. Add the can of diced tomatoes, diced green chilies, and chicken broth.
  7. Bring the mixture to a simmer and reduce the flame to low.
  8. Cover the pan and simmer for 20-25 minutes until the chicken is cooked through and tender.

Preparing the filling

  1. Once the chicken is cooked, take it out of the pan and shred it with two forks.
  2. Return the shredded chicken to the pan and stir to coat it with the sauce.
  3. To prepare the stuffing, you need cooked rice and black beans.
  4. You can use leftover rice or cook a new batch according to package directions.
  5. Drain and rinse the can of black beans.

  3. Spread the shredded chicken mixture over the rice and beans.
  4. Sprinkle the shredded cheddar cheese over the chicken mixture.
  5. Fold the sides of the tortillas and roll them tightly to make burritos.
  6. Place burritos, seam side down, in a large baking dish.

Baking the Burritos

  1. Preheat the oven to 350*F
  2. Bake the burritos in the preheated oven for 10-12 minutes, until the cheese is melted and the tortillas are lightly toasted.

Take the baking dish out of the oven and let the burritos cool for a few minutes. Serve the burritos with diced avocado, sour cream, chopped cilantro and hot sauce, if desired.
